Turkey & Bean Chili with avocado & cheese
Chili is a very versatile dish which can be made with meat or as a vegetarian option. This recipe includes 12 plants if you use mixed beans.
Serve with baked potato, rice, wedges or nachos.
Top with tomato salsa, sour cream, grated cheese and fresh herbs
METHOD
Add oil in a large pot and saute onion, garlic and red pepper for 5 – 7 mins until they soften.
Add in mince and cook until it is no longer pick.
Next add in chili powder, cumin, oregano, cayenne pepper and salt and mix thoroughly.
Add in tomatoes, chicken stock, beans and corn. Bring to a boil, then reduce and simmer for 30 – 45mins or until the chili thickens and flavours come together. Taste and adjust seasonings as necessary.

INGREDIENTS
- Olive Oil
- 1 onion, chopped
- 2 - 3 garlic clovers, minced
- 2 mixed peppers, chopped
- 500g turkey mince (you can use beef mince or swop to lentils for vegetarian option)
- 1 - 2 tablespoons chili powder but adjust this to your taste
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1/2 tablespoon smoked paprika
- 1/2 teaspoon Irish sea salt , plus more to taste
- 1 can diced tomatoes
- 500mls chicken stock
- 2 cans red kidney beans, rinsed and drained (or swop to mixed beans)
